Perfect Roasted Chicken

This is a no-fail chicken recipe. You guys will find yourself coming back to this recipe over and over again. It’s impossible not to love. We believe in simple and clean food. I know, I know… that’s CrazyFresh! No SAD (Standard American Diet) food here. Here, at CrazyFreshLife, it’s about nourishing your body, not just stuffing it.

1 Whole Chicken
1/4 c. Softened Butter (We use Kerrygold Grass-Fed Butter)
1/4 c. Olive Oil
1 t. Sea Salt
1/2 t. Garlic Powder
1/2 t. Black Pepper

Preheat your oven to 400.

You will want your large cast iron skillet for this recipe. If you don’t have one, just use an oven-safe dish or cookie sheet.

Take your clean, dry chicken and schmear it all over with the softened butter. This is the butter we love.

It’s grass-fediness is too delicious to use anything else. Drizzle the olive oil over the top. Sprinkle the chicken with the salt, pepper, and garlic powder. This is the sea salt that we’re in love with at the moment.

We like using a few different natural salts. We figure that we get a broader nutrient infusion with multiple kinds.

Roast at 400 degrees, uncovered. Every 10-15 minutes, spoon the juices back over the chicken. This helps create the most fought over crispy chicken skin your home has ever seen. Sometimes, I have used 2 different pans and split the chicken in half so we have more crispy skin in the end.

If you have a kitchen probe for cooking meat, go ahead and place it in. If you do not, then you want to roast the chicken for about 45-60 minutes, until the juices run clear when pierced between the leg and thigh.

When it’s done, you may have to fend off the wildlings long enough for you to get it carved. Every once in a while, your husband may claim all of the skin and stand in the kitchen to ‘watch’ you carve it. The smells that fill your home may also attract the other wildlife living around you; friends and neighbors. Don’t be frightened, they’re only there for the chicken. 🙂 Once I’ve even had our neighbor’s dog come waltzing into my kitchen to see what it was and if she could have some. She does love tasty meats!
